What you will need
Utensils
2 bowls
1 pan
1 fork
measuring cup
tablespoon
teaspoon
2 loaf pans
Dry Ingredients
1 .5 cups of flour
1 tsp baking soda
1tsp baking powder
0.5 tsp salt
Wet Ingredients
1 egg
2 tsp of vanilla extract
3 Ripe large bananas
3/4 cup of granulated sugar
1/3 cup of vegetable oil
Topping
3 TBL spoons of Bacardi Rum
1/2 cup of Brown sugar
2 TBL spoons of butter.
Instructions
Step 1: Preheat oven to 350 degrees Fahrenheit.
Step 2: Mix all the dry ingredients in a bowl and then set aside.
Step 3: in your second bowl, mash together your granulated sugar and bananas. Once mashed thoroughly, add your vegetable oil, vanilla extract, and egg.
Step 4: once your wet ingredients are thoroughly combined, pour into a bowl with dry ingredients and mix until all ingredients are fully incorporated.
Step 5: Set aside your batter and grease your loaf pans.
Step 6: once your pans have been greased, evenly distribute batter into the pans and then set aside.
Tip: To make this kid-friendly, I typically skip the topping portion and sprinkle a few chocolate chips on top of the loaves.
Step 7: Now add your saucepan to low heat.
Step 8: once the pan is heated, add in your 2 TBL spoons of butter. Once the butter is melted, you will want to add in your 1/2 cup of brown sugar quickly. NOTE: you will want to continuously stir this on low heat to prevent the sugar from burning.
Step 9: Once the sugar is fully melted and turning into a caramel, turn off the heat and stir in 3 TBL spoons of Bacardi rum. Note: there should be no flame- if there is a flame, your pan is too hot
Once the rum is thoroughly mixed in. quickly distribute the mixture on top of each loaf pan and place the loaves in the oven.
*Tip: If you want to make it more aesthetic, you can slice a banana Vertically and place half of it on each loaf.
Step 10: bake the loaves at 350 degrees Fahrenheit for 30-45 minutes. (Note: you can check if the loaves are ready by sticking a clean knife down the center of the loaf. if the knife comes out clean, the loaf is ready.) once loaves are ready, take them out of the oven, set them aside to cool for 20 minutes, and enjoy with a nice cup of tea, coffee, or even as dessert.
